These garlic-infused mashed red potatoes and sweet, buttery carrots are seasoned with the warming powers of turmeric, fresh aromatics, and a golden broth made with Knorr chicken bouillon. It’s got roots — literally — and soul. Ingredients
For the Carrots
- 4 large carrots, peeled and chopped into chunks
- 1 tablespoon olive oil or butter
- ½ teaspoon turmeric
- 1 teaspoon Knorr granulated chicken bouillon
- 1 small clove garlic, minced
- ¼ small onion, finely chopped
For the Mashed Red Potatoes
- 2 lbs red potatoes, washed and chopped (skins on for nutrients!)
- 2 tablespoons butter or olive oil
- ½ teaspoon turmeric
- 2 cloves garlic, minced
- ¼ onion, chopped
- 1½ teaspoons Knorr chicken bouillon
- Optional: 1 piece of Low John the Conqueror root (used like a bay leaf; removed before serving)
- Splash of milk or dairy-free cream (optional, for creaminess)
- Fresh cracked pepper to taste
Instructions
Step 1: Infuse the Potatoes
In a large pot, add chopped red potatoes and cover with water.
Add Low John root (if using), ½ teaspoon turmeric, 1 clove garlic, and a sprinkle of bouillon to the water. Boil until tender (about 15–18 minutes).
Drain potatoes, remove the Low John root (if used), and return potatoes to pot.
Step 2: Mash It Right
In a separate pan, sauté the remaining garlic and chopped onion in butter until fragrant and golden.
Add to the potatoes along with additional bouillon, a splash of milk (if desired), and mash to your preferred consistency. Leave a little texture for a rustic feel!
Step 3: Carrots That Sing
In a skillet, heat olive oil or butter. Add chopped carrots, onions, and garlic, and sauté until fragrant.
Add turmeric and bouillon, and a small splash of water. Cover and simmer until carrots are fork-tender (about 10–12 minutes), stirring occasionally.
Finish with a quick sear uncovered to bring out sweetness and color.
