Ingredients

  • 1 Cup of Grapeseed Oil
  • 1 Box of Spaghetti
  • 1/2 Pound (20-30) Tail-Off Large Raw Shrimp
  • 2 Boneless Pork Loin for flavor (optional)
  • Lemon Juice
  • Shredded Parmesan Cheese
  • Vegetable Ingredients:
    • 1 Onion
    • 4 Cloves of Garlic
    • Skin of 5 dried Cayenne Peppers

Spices

  • Ginger
  • Turmeric
  • Smoked Paprika
  • Cilantro Leaves
  • Basil Leaves
  • Knorr Chicken Bouillon Powder (Maggi)
  • Adobo
  • Table Salt (for water and seasoning)


Preparation Method

  1. Clean Your Meats: Start by cleaning your shrimp. In a medium-sized bowl, mix 1/2 cup of lemon juice with water and place the shrimp in the mixture. Set it in the fridge as you prepare the rest of the recipe. For the pork loin, rinse it under cold water, slice into small pieces, sprinkle lightly with salt, and let them rest. If you prefer, substitute the pork with spices for similar flavor profile. The pork is really about flavoring the oil.
  1. Prepare the Pasta: Fill a pot with enough water to cover the spaghetti. Add a pinch of salt and bring to a boil. Once boiling, add the spaghetti and cook until al dente, about 7-10 minutes. Set aside.
  2. Chop Your Vegetables: Thinly slice the onion and garlic. The onion will wilt into the dish, enhancing the flavor, while the garlic will maintain more of its structure as it cooks.
  3. Cook the Pork and Spices: In a large skillet, heat 1/4 cup of grapeseed oil over medium-low heat. Add the onions and garlic to the pan and cook until fragrant.


Meanwhile, season the pork loin chops with your spices, rubbing them in before placing them into the skillet with the onions and garlic. Slowly add pieces of dried cayenne pepper skin to the pan. Be careful not to spill seeds into the mix. These dried skins add a different flavor compared to fresh or powdered cayenne.

  1. Simmer the Pork: Add extra turmeric and ginger to the skillet and allow the pork loin  to cook, flipping occasionally until golden brown (about 10-15 minutes). 
  2. Cook the Shrimp: After removing the shrimp from the lemon-water mixture, add them to the skillet with the pork, onions, garlic, and spices. Cook the shrimp until they turn a vibrant orange, about 5-7 minutes. Make sure there’s enough oil in the pan to coat everything, as this will become your pasta sauce.
  3. Combine Pasta and Sauce: Once the pasta is cooked, drain it and return it to the pot on the lowest heat setting. Pour the entire mixture from the skillet into the pasta pot. Toss and stir until the noodles are fully coated with the flavorful sauce.
  4. Garnish and Serve: Finish by garnishing with shredded Parmesan cheese. Serve hot and enjoy!
