Instructions
1. Prep & Soak the WingsI personally clean my chicken in a water bath of water, vinegar and Maldon sea salt. I let it soak approximately 10 minutes in the cold water. Then, I clean it well in a fresh basin of cold water set in the sink. Finally, I put it from the sink straight into my mixture. However, I'm one of those people that cleans before, during and after they cook—so, this is optional. Basically, clean your chicken however you prefer and then pat wings completely dry with paper towels. Toss wings in buttermilk and let them marinate for 30 minutes (this tenderizes the meat).
In a bowl, mix flour, panko, Parmesan, garlic powder, paprika, salt, pepper, Italian seasoning, and cornstarch. Remove wings from buttermilk, letting excess drip off, then dredge in the flour mixture. Press gently to coat evenly.

Choose Your Cooking Method
Air Fryer Method:
Preheat air fryer to 400°F (200°C).
Lightly spray the basket with avocado oil.
Arrange wings in a single layer, don’t overcrowd. Air-fry for 18-22 minutes, flipping halfway, until golden and crispy.
Oven Method:
Preheat oven to 425°F (220°C).
Place wings on a wire rack over a baking sheet (this helps air circulation for max crispiness).
Lightly spray with avocado oil. Bake for 40-45 minutes, flipping halfway.
