For the Wings

2 lbs chicken wings, split into flats and drumettes
1 cup buttermilk (for soaking)
1 cup all-purpose flour
1 cup panko breadcrumbs (for extra crispiness)
½ cup grated Parmesan cheese (Parmigiano-Reggiano recommended)
1 tsp garlic powder
½ tsp paprika
½ tsp salt
½ tsp black pepper
1 tsp Italian seasoning
1 tbsp cornstarch (for extra crispness)
Cooking spray or avocado oil (for baking)


For the Garlic Parmesan Sauce

4 tbsp unsalted butter, melted (Kerrygold recommended)
3 cloves garlic, minced
¼ cup grated Parmesan (more for garnish)
1 tbsp fresh parsley, chopped
½ tsp red pepper flakes (optional, for a little kick)

Instructions

1. Prep & Soak the Wings
I personally clean my chicken in a water bath of water, vinegar and Maldon sea salt. I let it soak approximately 10 minutes in the cold water. Then, I clean it well in a fresh basin of cold water set in the sink. Finally, I put it from the sink straight into my mixture. However, I'm one of those people that cleans before, during and after they cook—so, this is optional. Basically, clean your chicken however you prefer and then pat wings completely dry with paper towels. Toss wings in buttermilk and let them marinate for 30 minutes (this tenderizes the meat).


2. Coat the Wings
In a bowl, mix flour, panko, Parmesan, garlic powder, paprika, salt, pepper, Italian seasoning, and cornstarch. Remove wings from buttermilk, letting excess drip off, then dredge in the flour mixture. Press gently to coat evenly.

Choose Your Cooking Method

Air Fryer Method:
Preheat air fryer to 400°F (200°C).
Lightly spray the basket with avocado oil.
Arrange wings in a single layer, don’t overcrowd. Air-fry for 18-22 minutes, flipping halfway, until golden and crispy.

Oven Method:
Preheat oven to 425°F (220°C).
Place wings on a wire rack over a baking sheet (this helps air circulation for max crispiness).
Lightly spray with avocado oil. Bake for 40-45 minutes, flipping halfway.
Make the Garlic Parmesan Sauce

Toss & Serve

In a small pan, melt butter over low heat. Add minced garlic, cook for 30 seconds until fragrant. Stir in grated Parmesan, red pepper flakes, and chopped parsley. Immediately toss crispy wings in warm garlic Parmesan sauce. Sprinkle with extra grated Parmesan & fresh parsley for a luxurious finish.
